Calling all Therapy gals who love a good dinner party, here are our tips on how to cook up the perfect dish for a cold winter’s night with all your best girlfriends. We asked Master Chef’s Depinder Chhibber what her favourite quick and easy cuisine was for a dinner party and here’s what she came up with …
"Split chickpea lentils which is a staple in my home for dinner and it's super easy to make and one of my absolute favourites” Plus this recipe can be served with rice!
1 cup chana daal/split chickpea lentils
1 red onion
1/2 cup tomato purée/chopped tomatoes
2 tbsp minced garlic and ginger
1 green chilli
2 tsp turmeric powder
1 tsp red chilli powder
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp cumin seeds
1 bay leaf
1 tsp garam masala powder
Salt to taste
Wash and soak the daal for 30 mins.
In a pressure cooker, add soaked daal along with 3 cups of water
1 tsp turmeric powder, salt and bay leaf.
Cook this for 10-15 mins in a high-pressure setting. (Alternatively, you can also boil the daal until it’s cooked)
Meanwhile, in a separate pan add 2 tbsp of ghee or oil.
Add cumin seeds and wait for them to splatter, followed by minced garlic and ginger, chopped green chilli and onion.
Cook until the onions are translucent and add salt, turmeric powder, red chilli powder, coriander powder and cumin powder.
Mix well and add the tomato puree cooking for 5-10 mins or until the oil starts to separate.
Add this mixture to the cooked daal, add Garam Masala and simmer for 10 mins.
Add lemon juice to season and garnish with coriander leaves.
